If you’re looking to maximise christmas feels this year, get on your comfiest christmas sweater and follow this quick and easy recipe for delicious gingerbread cookies to start off the holidays right! The ingredients you’re going to need are:

  • ½ cup coconut oil, softened
  • 1 tsp cinnamon
  • ⅓ cup maple syrup
  • 3 tbsp blackstrap molasses
  • dash of salt
  • 2 ½ cups gluten-free flour blend
  • ½ tsp pure vanilla extract
  • 2 tsp ground ginger
  • 1/4 tsp nutmeg

First thing you’re going to want to do is blast this iconic christmas bop, while preheating your oven to 180°C. Lay out your ingredients in front of you so you have a clear overview of what you still need to add. Once you’re in the zone of christmas spirit, place the coconut oil in a large mixing bowl and whip until smooth. Add molasses, vanilla, spices and salt and mix again. Switch to using a wooden spoon and gradually add in flour. Make sure you’ve washed your hands before moving onto the next step! After you’ve done so get in there with your hands and work the dough until you can shape it into a ball. If it’s a little too sticky for your taste, add more flour  or if it’s too dry add more sweetener. Once you have the right consistency shape the dough into two balls and flatten out to form a disk.

Now take your rolling pin and evenly roll out one part of the dough to a little less than a centimetre thickness. The thickness doesn’t have to be exact but make sure the whole thing is even to prevent some cookies from baking faster than others. Now that your cookie dough is flattened out, use gingerbread cookie cutters to get your shape (If you wanna save time with the decorating and still have cute little gingerbread men I recommend copping these imprintable cookie cutters from amazon). Spread the men out evenly on your baking tray and bake for 11-12 minutes, until the edges just begin to darken. Once your timer goes off make sure to allow the cookies to cool for around 10 minutes (they will harden a little within minutes of cooling) before enjoying them with a nice hot cup of tea!
